Loaded Pancakes

Ingredients:

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 large eggs
  • 1 (8 oz) Vanilla *Supplement
  • 2 tablespoons vegetable oil

Preparation:

  1. In a large bowl, mix flour and baking powder. Make a well in the center, and pour in supplement, egg and oil. Mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Optional: Instead of syrup, cover pancakes with honey, sugar-free jam, fruit, or yogurt.
Recipe serves 4.
