This creamy casserole makes for an excellent hardy meal.
Ingredients
1 Tbsp margarine
1 small onion, chopped
1/2 cup celery, chopped
1 10-ounce package frozen,
chopped broccoli, thawed
4 ounces Velveeta® Light or other light
processed cheese, cubed
2 235-mL bottles Vanilla Supplement*
1/4 tsp black pepper
1 cup uncooked long grain rice
Directions Preheat oven to 180°C (350°F) Makes 4 servings.
1. In a large skillet over medium heat, melt margarine.
2. Sauté onion, celery and broccoli for 5 minutes.
3. Add cheese, Ensure, and pepper. Stir until cheese melts.
4. Add rice.
5. Pour mixture into a 23-cm (9-inch) square casserole dish coated with cooking spray.
6. Bake covered for 45 minutes. Uncover and cook 15 minutes or until rice is cooked and mixture is hot and bubbly. Serve immediately

Loaded Pancakes
Ingredients:
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 large eggs
- 1 (8 oz) Vanilla *Supplement
- 2 tablespoons vegetable oil
Preparation:
- In a large bowl, mix flour and baking powder. Make a well in the center, and pour in supplement, egg and oil. Mix until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Optional: Instead of syrup, cover pancakes with honey, sugar-free jam, fruit, or yogurt.
Recipe serves 4.

Warm Your Heart Chili
Chili
Ingredience
2 pounds ground beef
1 15 oz can pinto beans
1 15 oz can kidney beans
1 small onion, chopped fine
1/4 cup chopped green bell pepper
1-2 cloves garlic, minced
Salt and black pepper to taste
2 tablespoons blended chili powder
1 tablespoon ground cumin
2 teaspoons ground oregano
1 8-oz. can tomato sauce
2 tablespoons flour
2 8-oz Chocolate *Supplement
Instructions
Place ground beef in a large, deep skillet. Heat over medium-high until evenly brown. Drain and crumble. In a large pot over high heat combine ground beef, tomato sauce, kidney beans, pinto beans, onions, green bell pepper, chili pepper, cumin, oregano salt and pepper, and Ensure or Boost. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours. (Note: If using a slow cooker, set on low, add ingredients, and cook for 8 to 10 hours.) Serve warm with rice, noodles, cornbread, chips, or crackers.

Fudge Ice Pop
Makes: 7 pops

1 cup Milk
1 8 oz Chocolate *Suppliment
1 3.5-ounce package regular instant chocolate pudding
1-1/2 cups frozen whipped topping
Directions
Paper cup, wooden pop sticks, or frozey-pop containers
In a mixing bowl, whisk together the milk and Ensure. Add the pudding mix and continue to whisk for 1 minute. Fold in the whipped topping. Spoon mixture into molds or paper cups. Insert wooden sticks or spoons and freeze about 5 to 6 hours or until firm. Unmold and serve.

Spinach Artichoke Dip

11/2 cups thawed, chopped frozen artichoke hearts
6 ounces cream cheese
1/3 cup grated Parmesan
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 cup plain breadcrumbs
