Apple Pecan Muffins
Ingredients
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
2 cups bran cereal
1 1/2 cups Butter Pecan flavored supplement*
1/3 cup firmly packed brown sugar
1 cup peeled and chopped apples
1/2 cup apple sauce, unsweetened
1 egg
Directions
Makes 15 muffins. Preheat oven to 400°F.
1. In a mixing bowl, combine flour, baking powder, baking soda and
cinnamon. Make a well in the centre.
2. In another bowl, stir together bran cereal, Ensure, and sugar.
3. Let stand 5 minutes. Stir in chopped apples, apple sauce, and egg.
4. Add to flour mixture. Stir until moistened.
5. Spray muffin pans with cooking spray or line with paper baking
cups. Fill 2/3 full.
6. Bake for 18 to 20 minutes or until golden brown. Serve warm.

Hardy Sweet Potato Apple Soup
This hardy holiday recipe is sure to be a hit with everyone at the table.
- 1 3/4 pound(s) sweet potatoes, peeled and cut into 1-inch dice
- 1 small parsnip, peeled and cut into 1-inch dice
- 2 garlic cloves, coarsely chopped
- 2 tablespoon(s) extra-virgin olive oil
- 4.5 cups vegetable stock or low-sodium broth
- 2 (8 oz) Vanilla *Supplement
- 1 dash(es) apple cider
- Finely diced Granny Smith apple and minced parsley, for garnish
Directions
- Preheat the oven to 375 degrees F. On a baking sheet, toss the sweet potatoes with the parsnip, garlic, and olive oil. Bake for 45 minutes, or until tender.
- In a blender, puree half of the vegetables with 3 cups of the stock; transfer to a large saucepan. Repeat with the remaining vegetables and stock. Add the *Supplement and apple cider heat through. Serve with the diced apple and minced parsley.
