Chocolate Fudge


This easy recipe will be a hit for your love ones who need that extra boost of calorie and nutrition!

Ingredients


2 cups semi-sweet chocolate, 

    coarsely chopped
1 235-mL bottle Chocolate Supplement*
2 Tbsp butter, unsalted
Pinch of salt
1/4 cup walnuts


Directions (Makes 16 servings)

1. Put the supplement, butter and salt in a saucepan
 on low heat. Gently heat without bringing to a boil.
 2. Add chocolate to melt, stirring constantly. Add walnuts and mix well.
 3. Spread in parchment paper-lined 8-inch (2-L) square baking dish.
 4. Refrigerate until set. Store covered in the refrigerator.

Sweet Potato Mash

This side dish adds volumes to any meal...and it's done in three steps! 
Delicious was never so easy. 




Ingredients
1 1/2 lb sweet potatoes, peeled and cut into 1-inch pieces
1 large baking apple, peeled, cored, and cut into 8 pieces
2 tsp fresh ginger, grated
1/4 tsp ground cinnamon
1/8 tsp ground cardamom
1/2 tsp salt
1 tsp vegetable oil
1/2 cup Vanilla Supplement*

Directions (Preheat oven to 200°C (400°F). Makes 6 servings)

1. In a medium cast-iron frying pan or oven-safe frying pan, combine 
 sweet potatoes, apple bits, ginger, cinnamon, cardamom, salt, and oil. 
 Toss together. 

2. Bake for 20 minutes, stirring occasionally. Bake an additional 15 to 
 20 minutes or until the potatoes are soft and slightly caramelized. 
 (If potatoes are sticking to the pan, carefully add a few tablespoons 
 of water.)

 3. Transfer mixture to a mixing bowl, add the Ensure and mash with 
 potato masher. Serve hot.

Broccoli Rice Casserole

This creamy casserole makes for an excellent hardy meal. 


Ingredients

1 Tbsp margarine
1 small onion, chopped
1/2 cup celery, chopped
1 10-ounce package frozen, 
      chopped broccoli, thawed
4 ounces Velveeta® Light or other light 
    processed cheese, cubed
2 235-mL bottles Vanilla Supplement*
1/4 tsp black pepper
1 cup uncooked long grain rice



Directions Preheat oven to 180°C (350°F) Makes 4 servings.

 1. In a large skillet over medium heat, melt margarine.

 2. Sauté onion, celery and broccoli for 5 minutes.

 3. Add cheese, Ensure, and pepper. Stir until cheese melts.

 4. Add rice.

 5. Pour mixture into a 23-cm (9-inch) square casserole dish coated with cooking spray.

 6. Bake covered for 45 minutes. Uncover and cook 15 minutes or until rice is cooked and mixture is    hot and bubbly.  Serve immediately

Carrot Soup

Ideal for a cool day. This soup will warm you up and fill you up. 


Ingredients
1 pound baby carrots
1 1/2 Tbsp margarine
1 cup chopped onion
1 1/2 tsp chicken soup base
2 235-mL bottles Vanilla Supplement*
1/2 cup water
1 1/2 tsp peeled and chopped ginger roots
3/4 tsp coriander
1/2 tsp grated orange peel
1/4 tsp ground black pepper



Directions (Makes 4 servings)
1. Boil carrots until tender. Drain.
 2. Melt margarine in a medium pan. Add onion and chicken soup base.
 3. Sauté until onion is tender, but not brown.
 4. Combine carrots, onion mixture, Ensure, water, ginger roots,
 coriander, orange peel and pepper in a blender. Blend until smooth.
 5. Heat to serving temperature. Do not boil.

Apple Pecan Muffins




Ingredients
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
2 cups bran cereal
1 1/2 cups Butter Pecan flavored supplement*
1/3 cup firmly packed brown sugar
1 cup peeled and chopped apples
1/2 cup apple sauce, unsweetened
1 egg


Directions
Makes 15 muffins. Preheat oven to 400°F.
 1. In a mixing bowl, combine flour, baking powder, baking soda and 
 cinnamon. Make a well in the centre. 
 2. In another bowl, stir together bran cereal, Ensure, and sugar.
 3. Let stand 5 minutes. Stir in chopped apples, apple sauce, and egg. 
 4. Add to flour mixture. Stir until moistened.
 5. Spray muffin pans with cooking spray or line with paper baking 
 cups. Fill 2/3 full.
 6. Bake for 18 to 20 minutes or until golden brown. Serve warm.

Hardy Sweet Potato Apple Soup

This hardy holiday recipe is sure to be a hit with everyone at the table. 

Ingredients
  • 1 3/4 pound(s) sweet potatoes, peeled and cut into 1-inch dice
  • small parsnip, peeled and cut into 1-inch dice
  • garlic cloves, coarsely chopped
  • tablespoon(s) extra-virgin olive oil
  • 4.5 cups vegetable stock or low-sodium broth
  •  (8 oz) Vanilla *Supplement
  • dash(es) apple cider
  • Finely diced Granny Smith apple and minced parsley,  for garnish

Directions
  1. Preheat the oven to 375 degrees F. On a baking sheet, toss the sweet potatoes with the parsnip, garlic, and olive oil. Bake for 45 minutes, or until tender.
  2. In a blender, puree half of the vegetables with 3 cups of the stock; transfer to a large saucepan. Repeat with the remaining vegetables and stock. Add the *Supplement and apple cider  heat through. Serve with the diced apple and minced parsley.
